Chicken Feta Roll Ups

These are really a recipe that’s a non-recipe. They’re just like everyone’s favorite roll ups from a fast-casual Mediterranean place in town. These chicken feta roll ups have so few ingredients, you might even have these items on hand, even the salsa for dipping! Another 5-ingredient (excluding EVOO and seasonings) winner for lunch or dinner.

  1. Slice chicken breasts into thin strips. In a bowl, toss sliced chicken with the olive oil, lemon pepper ad salt. Let marinate for 20 minutes.
  2. On a medium non-stick skillet over medium-high heat, add the chicken and cook until crisp, about 3-4 minutes per side, until cooked through. Remove chicken from pan.
  3. To make the roll ups, add 2 tablespoons feta, 1/4 cup cooked chicken and 4 tomato strips to each tortilla. Roll tightly to close.
  4. In the same non-stick skillet over medium-high heat, add rollups seam side down and cook 1 minute per side to get a nice crispy brown end.
  5. Remove from skillet, slice and serve with salsa!
