Green Beans with Burrata, Bacon, and Balsamic
If I am perfectly honest, in the past I have found burrata to be over played and over used. I think it is because it is so typically used with just tomatoes and basil, which is still delicious. I set out to come up with a way to use burrata with a different twist. Enter this dish. The crisp tender green beans, salty bacon, tangy vinaigrette and creamy burrata combined together make this dish simply irresistible.

- Bring a large pot of water to a boil. Add 1 tablespoon salt to the water. Blanch green beans for 4-5 minutes, until crisp tender. Drain beans and add to a bowl of iced water.
- While beans cool, cook bacon on stove top until crispy. Drain bacon from fat and crumble.
- In a blender, add balsamic vinegar, shallots, garlic, thyme, dijon, honey, salt and pepper. Blend to combine. Slowly pour in olive oil on low speed.
- To assemble, plate green beans, followed by burrata and bacon. Drizzle balsamic on top and finish with cracked black pepper.
